Dandelion, yes, the weed!
This pesky little plant is a powerhouse of health, can be used in food and herbal medicine and can grow pretty much any where. Just make sure it is a healthy plant, that is not carrying any pesticides or nasties, otherwise opt for an organic dried alternative.
You can eat Dandelion leaves, roots and flowers. They have a slightly bitter flavour but can be less bitter if picked during autumn or spring. Cooking can remove some of the bitterness, but they are also beautiful raw in salads, or add them to a smoothie in place of kale.
Dandelion contains more protein than spinach, is a very rich source of beta-carotene which we convert into Vitamin A. It is also rich in fiber, vitamin C, Iron, potassium, calcium, phosphorus, magnesium and zinc. It also contains vitamin D, organic sodium, all your B complex vitamins and trace minerals.
This plant is pretty much a complete multi-vitamin in itself.
